Crock Pot Salsa Chicken

I found this recipe on a food blog when I was looking for a picture to go with my salsa chicken casserole. Mmmmm. I can't wait to try it!

Make Life Delicious blog says: I’ve seen many varieties of this recipe, but this one works for me. You can serve this up any way you like…over rice, with tortillas to make soft tacos, you name it. It couldn’t be easier to make. You dump it all in your crock pot and you’re done! The meat is so tender when it’s cooked you can just shred it with a fork with little effort. It’s wonderful!

Ingredients

  • 4 chicken breasts, frozen or thawed (you can use less or more depending on how many you will be serving)
  • 1 can of corn
  • 1 can of black beans, drained
  • 1 jar salsa

Directions

Put all ingredients in a crock pot and cook on low for 4-6 hours. Shred chicken with a fork and serve over rice or with tortillas and the fixin’s to make soft tacos.

That’s it! Enjoy!

Yet another quick, easy, WW friendly recipe! I got this recipe from a Betty Crocker e-mail. I made a few of my own adjustments to it and listed my recipe below.
Note: without the cheese it would be only 7 ww points per serving! (I like the cheese!)

10 oz Old El Paso® Sauces Hot Enchilada Sauce, (MILD)

1 cup(s) Minute Instant, enriched, long grain white rice

1 cup(s) Ortega Original salsa, mild

15 oz cooked black beans, (can)
20 oz Chicken breast, skinless, boneless, raw, 5 sm breast

2 cup(s) Weight Watchers Reduced Fat Shredded Mexican-Style Cheese

Teriyaki Chicken Fillets


I bought these at costco for about $15. I dice all of the chicken up and serve it with rice and a veggie. These are pretty tasty and and great easy meal. Just bake for 18-20 minutes. The best part? They are only 3 points per breast even covered in gooey teriyaki!

Phyllo Fruit Tart

Haven't tried this one yet but I think I could eat all 8 servings!


A light summer dessert with one of my favorite things, white chocolate!! This would also be wonderful with mixed berries!

I am taking a little family vacation, so I asked my friend Gina Dunn to guest post. Gina and I have a lot in common, we both love to cook light, we both love cooking magazines and cookbooks, and we have the same name! She recently started her first blog, Point-less Meals, but has been emailing her recipes to a long list of friends almost daily along with photos for a while so she was able to fill up her blog with lots of recipes from her past. Please welcome her!

Phyllo Fruit Tart
Recipe from Point-less Meals
Servings: 8 • Serving Size: 1/8th Points: 4 pts
Calories: 183 Fat: 6 g Protein: 4.5 g Carb: 26 g Fiber: 3 g
  • 1 tbsp butter, melted
  • 1 tbsp canola oil
  • 8 sheets phyllo dough (14 x 9)
  • 1 pkg. (8 oz) FF cream cheese
  • 3 tbsp powdered sugar
  • 1 cup Cool Whip Free
  • 1 can (11 oz) mandarin oranges, drained
  • 4 kiwifruit, peeled and sliced
  • 1-1/2 cups sliced strawberries
  • 1 oz white baking chocolate, melted
In a small bowl, combine butter and oil. Place one sheet of phyllo dough on a baking sheet. Brush with butter mixture. Repeat with remaining sheets. Bake at 400 for 5-7 minutes or until browned. Cool completely.

Beat cream cheese until smooth. Add powdered sugar. Beat well. Fold in Cool Whip. Spread over cooled phyllo. Top with fruit. Melt chocolate in microwave and drizzle over fruit.

Brownie 'N Fruit Kabobs

300 cal, 12 g fat, 2 fiber= 6 WW Points per skewer

Need something to take to a get together or make just for fun? These are just what you should make. I made 46 of these babies for my son's 3rd grade luau. Needless to say, there were no leftovers. This is a totally flexible recipe but I'm telling you, this flavor combo is the bomb! If I'd had time, I would have drizzled the chocolate butter sauce on them too. Ooooh, the possibilities.

Note, the brownies were a little tricky to skewer, the bigger the better. And, it was somewhat time consuming. I did it in steps over a few days. Simply skewering took quite some time! Totally worth it. You'll be a hit. Maybe add some blueberries for the 4th?

HG's Lava Flow 3pts vs. avg. 10pts


Oh, how I just love this drink. While I order virgin drinks, this is my favorite of them all. You can use pineapple juice in place of rum. I can't wait to try this.

Ingredients:
3 oz. rum
8 frozen unsweetened strawberries, partially thawed
1/2 cup fat-free vanilla ice cream
4 oz. (1/2 cup) sugar-free calorie-free coconut-flavored syrup (like the kind by Torani)
1/4 cup canned crushed pineapple packed in juice
2 no-calorie sweetener packets (like Splenda)
1 1/2 cups crushed ice or 8 - 12 ice cubes
Optional garnish: pineapple wedges

Directions:
Add rum and strawberries to a blender and puree until smooth. Distribute evenly between 2 tall glasses.

Rinse blender. Place remaining ingredients in the blender, and add 4 oz. (1/2 cup) cold water. Blend at high speed until smooth.

Very slowly pour the contents of the blender over the strawberry mixture in the glasses. If you like, garnish each glass with a pineapple wedge. Enjoy!

MAKES 2 SERVINGS

HG's Sweet 'n Chunky Chicken Salad


Hot Chick!

Dozens of fat grams in chicken salad = bad news. Crunchy cucumbers, red grapes, and yogurt dressing on the other hand = GREAT additions. Here's HG's guilt-free answer to the notoriously fattening Waldorf chicken salad...

Ingredients:
1 cup (about 4.5 oz.) cooked & roughly chopped skinless lean chicken breast
1/2 cup chopped Persian or Kirby cucumber**
1/3 cup red seedless grapes, halved
1/3 cup chopped apple
1/4 cup plain fat-free yogurt
2 tbsp. fat-free mayonnaise
1 no-calorie sweetener packet (like Splenda)
1/4 tsp. lemon pepper seasoning
dash salt

Directions:
Mix together the yogurt, mayonnaise, sweetener, lemon pepper seasoning, and salt. Coat the chicken in this mixture, and then stir in the chopped cucumber, grape halves, and chopped apple. Then try not to pass out as you chow down on this insanely good chicken salad! MAKES 2 SERVINGS

HG Tip! If cooking your chicken from scratch, use nonstick spray (not oil) to keep the fat count down.

**These short, sweet cucumbers rule in this recipe! But if you can't find 'em, any cucumber will do.

HG's Creamy Dreamy Fruit Fandango


PER SERVING (1 cup): 131 calories, 3g fat, 67mg sodium, 26g carbs, 3g fiber, 18.5g sugars, 1.5g protein -- POINTS® value 2*

Is it a dessert? A snack? A side dish? YEP, it's all of the above. And it's gooooooooood! Chocolate chips and slivered almonds invade this sweet 'n creamy fruit salad...

Ingredients:
1 cup Cool Whip Free, thawed
1 tbsp. Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
2 Granny Smith apples, cored and chopped
3 cups seedless red grapes, halved
2 cups chopped strawberries
1/4 cup thinly sliced dry-roasted almonds (like Almond Accents)
2 tbsp. mini semi-sweet chocolate chips

Directions:
Place Cool Whip in a large bowl, sprinkle with pudding mix, and stir until smooth and slightly thickened. Add fruit and toss to coat. Add almonds and chocolate chips, and gently stir. That's it. (It's really easy.) Eat up!

MAKES 8 SERVINGS

You had me at "Mini cheesecakes"

These truly are as good as they look! Make a batch of these the next time you need to bring a dessert. Mmmmmmm! Use whichever topping you like.



Mini Cheesecakes

Ingredients
12 item(s) *vanilla wafer(s)
3 oz cream cheese
12 oz fat-free cream cheese
1/2 cup(s) sugar
1/2 tsp vanilla extract
2 item(s) egg
1 cup(s) Comstock/Wilderness Lite cherry, pie filling
Instructions

(*I input the recipe with red.fat and regular vanilla cookies and while there is a 3.5 pt difference in the entire recipe, each mini cheesecake still comes out to 3 pts)
Preheat oven to 350 degrees. Line muffin tins with 12 foil cupcake papers. Place a vanilla wafer in the bottom of each cupcake paper.
2. In a mixing bowl, beat cream cheese and fat-free cream cheese until smooth. Add sugar and vanilla and mix well. Add eggs and beat until smooth.
3. Pour cheesecake mixture into muffin tins. Bake for 20 minutes or until centers are almost set. Cool. Refrigerate 2 hours or overnight.
4. Decorate cheesecake with cherry pic filling.
Makes 12 cheesecakes/servings.
(I don't know if you tried the last cheesecake recipe I posted but I finally made it and really didn't care for it personally so I think I'm going to delete that post. It just looked so good I couldn't help but post it.)

No Bake Graham Cracker Cheesycake!!


This recipe looks too easy, too good and too low in calories to be true! I want to try it very soon!
I put the recipe on e-tools and it comes up with 1 pt per square. (I only did one layer of graham crackers and used regular since I couldn't find red. fat. Also, there are 8pts in can of lite cherry pie filling. If that spreads over the whole dessert, that's barely 2 pts per square! I'll post what I think when it's done.)

Chicken Taco Soup

This is one of my favorite recipes. It's not weight watcher's but is totally healthy! I can't believe I didn't post this one yet. I've had it on my etools recipe file for a long time!

Chicken Taco Soup

This is SO easy!

Ingredients
1 1/2 pound(s) Chicken breast, skinless, boneless, raw
2 cup(s) canned yellow corn
2 cup(s) canned white beans
2 cup(s) canned black beans
4 cup(s) canned diced tomatoes
1 cup(s) canned tomato sauce
2 cup(s) water
2 serving(s) Lawry's chicken taco seasoning
Instructions

Dice chicken into small chunks (can add onion) and cook with one pack of seasoning as directed on package. Put all the rest into a crock pot and add chicken. Cook on low 4 8 hours. Garnish with sour cream, cilantro, chips, cheese, olives etc. Enjoy!
Make sure to adjust points for any garnishes added!-

Light(or reg) Sour Cream, 2 tbsp=1 pt
tortilla chips, 8 =2 pts
2% cheddar cheese, 3 tbsp=2 pts
(regular cheddar, 3tbsp/3 pts)
I think these amounts are really generous and you probably won't even use that much sour cream or cheese and maybe not even all the chips.

Easy Zucchini Parmesan

This quick and healthy snack tastes like a gormet side-dish, but just takes minutes to prepare! And as a bonus, it's an easy way to get the kids to eat their vegetables.

Ingredients

Zucchini, 1 cup, sliced
Parmesan Cheese, grated, 1 tbsp
I Can't Believe It's Not Butter, Original Buttery Spray, 10 sprays
Non-stick cooking spray

Directions
Line a cookie sheet with aluminum foil, then coat with some non-stick cooking spray. Place the zucchini slices out on the pan, then spritz with them with the butter spray. Sprinkle on the parmesan cheese and then pop it in the oven. Broil for a few minutes - until the cheese starts to brown. Enjoy it while it's warm!

Make a larger batch for a delicious and healthy side dish for any meal! Your family will love it!

Oh my gosh, I'm going to make this!

"Here's a super moist, low fat carrot cake recipe perfect for Easter or anytime of the year. This is made with a can of crushed pineapple which makes it very moist. I baked this in my new 8 inch round cake pan which I love because it's 3 inches deep but you can use a bundt cake pan or 2 smaller round pans for this instead (baking time will vary). I noticed other ww carrot cake recipes had much smaller serving sizes, but I think it's easiest to cut this into 16 equal slices however if you want to make this into cupcakes or 24 slices, it would be 3 points each..."

1 pt "Whenever" cake

I'm not sure the official name of this recipe but it seems like it's designed for "whenever" you're in the mood for a little cake. Hopefully I remember the recipe right. I'll be trying this soon.
1 box angel food cake mix +

1 box "any flavor" cake mix

Mix both together in a ziploc bag. "Whenever" you feel like some cake: scoop out 1/3cup mix, add 3 tbsp water into a microwavable dish and microwave for 1 minute. Apparently, that will give you 1 pt cake in 1 minute! Good luck! Can't wait to try this. (I'm a little nervous about the "just cake-no frosting" concept so I think I might go get some of that ff dreyer's slow churn brought up by a member last week. It's on sale this week at albertson's (2/$6) and my FAVORITE dreyer's 1 pt strawberry whole fruit bars are on sale too for $1.99. That's a stock up price!

HG's Spicy Tortilla Pizza Mexicali

Ok, official updated post:

This is pretty good and you could be really creative with it. If you know me at all you know that I don't like "odd ingredients." No soy crumbles for me! So I substitute what I like and keep the portions right to keep the points the same.
I don't see why you couldn't make a mexican pizza out of this and crisp up 2 tortillas layer with 1/2 cup of beans for 2 more points but maybe a little more filling. Also, why not top with your favorite salsa instead of the tomatoes. Or make it a complete meal and serve with a mexican salad with the remaining ingredients. Be creative and have fun with it.

Might even make a good appetizer for the whole family for taco night!

PER SERVING (entire pizza):

Ingredients:
1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber Tortilla
1/3 cup canned diced tomatoes with green chilies, drained
½ cup frozen ground-beef-style soy crumbles, thawed (I use ground beef/turkey)
2 tablespoons shredded fat-free cheddar cheese
2 tablespoons shredded fat-free mozzarella cheese
½ teaspoon dry taco seasoning mix
1 tablespoon fat-free sour cream

Directions:
Preheat oven to 375 degrees
Bring a medium-large pan sprayed lightly with nonstick spray to medium heat on the stove. Cook tortilla in the pan for a few minutes on each side until slightly firm.
Transfer tortilla to a baking sheet sprayed with nonstick spray. Spread tomatoes with chilies evenly over tortilla, leaving about 1 inch of space around the perimeter.
I made some minor substitutions, to what I like.

I was just searching for a picture to use for my recipe request post and came across this most mouthwatering cobb salad picture. Wonderfully, it connected me with this website. I love this breakfast. It tastes delicious, is loaded with "diamond foods" and has tons of food! You could even spread with smucker's red.sugar jam without adding points!
Here's the breakdown:

Blueberries: 1/4 cup 0 pts
1% milk: 1/2 cup 1 pt
Thomas bagel thin: 1 1 pt
I can't believe it's not butter spray: 0 pts

Double Chocolate Zucchini Muffins

Double Chocolate Zucchini Muffins

Cooking Time: 15-20 min
Level of Difficulty: Easy

Ingredients

1/3 cup(s) water
2 cup(s) zucchini
1/2 cup(s) unsweetened cocoa
3/4 cup(s) sugar
1 1/4 tsp baking soda
1/2 tsp table salt
1 tsp ground cinnamon
1/2 cup(s) plain fat-free yogurt
4 item(s) egg white(s)
1 tsp vanilla extract
1/3 cup(s) chocolate chips
1 1/2 cup(s) whole wheat flour
Instructions

Pour boiling water over shredded zucchini.
In separate bowl, combine all dry ingredients.
Combine yogurt, egg whites, and vanilla; add to zucchini.
Gently mix dry and wet ingredients together until moistened.
Use 1/4 C to pour into 12 muffin cups.
Sprinkle chocolate chips over tops.
Cook at 350 degrees for 15-20 minutes.
