Cranberry-Nut Turkey Roll Ups

I got this recipe from ww's website. Their recipe from "10 no cook dinners" says you should get rollups worth. I had to cut mine in half to get 2! :) Points value was 6 for one, not 4 for 2. I paired it with fresh grapes and a couple halved strawberries for a great light lunch. Enjoy!


Ingredients:
1 item(s) Mission® 96% Fat-Free Whole Wheat Tortilla(s)
1 Tbsp Ocean Spray Whole Berry Cranberry Sauce
1 Tbsp Hellmann's Light Mayonnaise
3 oz turkey breast lunch meat (3 1/2-inch square)
1 cup(s) romaine lettuce, (leaf)
1 tsp chopped pecans

Instructions

Spread whole-wheat tortilla with 1 tablespoon whole berry cranberry sauce and 1 tbsp. light mayo. Top each with 3 oz (thickly) sliced turkey breast, 1 leaf romaine lettuce, and 1 teaspoon chopped pecans. Roll up and serve.

Ingredients


1 spray(s) cooking spray

1/4 cup(s) light cream cheese, at room temperature

2 Tbsp reduced-fat sour cream

1 Tbsp honey
3 large peach(es), pitted and halved

Instructions

  • Preheat the grill. Off heat, coat the grill rack with cooking spray.

  • Mash the cream cheese and sour cream in a bowl with a fork; stir in the honey until smooth.

  • When the grill is hot, grill the peaches cut side down until marked, about 1 minute. Alternatively, spray a grill pan with cooking spray and heat over medium-high heat; add the peaches cut side down and grill until marked, about 1 minute.

  • Place a peach half cut-side up on each of six plates; top each with 1 tablespoon sweetened cheese mixture. Yields 1 peach half per serving.

Notes

  • Use peaches that smell sweet but are still a little firm so they hold up over the heat. Garnish with ground cinnamon or grated nutmeg.

Baked Potato Skins With Creamy Spinach and Turkey Bacon


I was canceling my monthly pass to use my lifetime status and when you choose not to cancel a little booklet of recipes pops up. I thought this recipe looked really good. Someone should make these for ww's if they're as good as they look! hint, hint! :)

Creamy spinach and salty bacon makes these potatoes a hit. Make a double batch for your next party.


Ingredients
3 medium potato(es), baked, sliced in half and cooled
1 spray(s) cooking spray
20 oz chopped frozen spinach, thawed and squeezed dry
4 oz light cream cheese, at room temperature
1/4 tsp table salt
1/4 tsp black pepper
3 slice(s) cooked crisp turkey bacon, crumbled
Instructions

* Preheat oven to 400ºF. Scoop out flesh of potatoes, leaving about 1/4 of potato flesh in potato. (Reserve remaining potato flesh for another use such as mashed potatoes.)

* Place potato halves on a baking sheet and coat with cooking spray. Bake until lightly browned, about 15 minutes. While potato skins bake, combine spinach, cream cheese, salt and pepper in a medium bowl until well-blended.

* Remove skins from oven and spoon 3 tablespoons of spinach mixture into each potato half; bake until warmed through, about 5 minutes more.

* Remove skins from oven and top each half with about 1 tablespoon of crumbled bacon. Yields 1 potato half per serving.

Notes

* To easily dry spinach, place thawed spinach in a clean kitchen towel and squeeze out liquid over the sink, as though you were wringing out a wet towel.

No-Cook Raspberry Sauce, 1 pt

For those that don't have the Momentum Healthy Cooking Recipe Book, here is the recipe Kim was talking about.

2 cups fresh or thawed frozen raspberries
1/3 cup confectioners' sugar
1 tablespoon orange-flavored liqueur, such as grand Marnier (optional)

Puree all ingredients in food processor until smooth. Push puree through a strainer; discard seeds. Cover and refrigerate up to 1 week.

Per serving (2 Tablespoons): 46 Cal, 0 g Fat, 1 g fiber

*Drizzle this sauce over store bought angel food cake, fat-free vanilla frozen yogurt, or fresh sliced melon.

Weight Watchers One-Point Hearty Chili

(I posted this recipe back on Feb. 17th but didn't have a picture at the time. I forgot how absolutely delicious this recipe is! Yum!!
A WW MUST HAVE RECIPE!!

10 ounces extra-lean ground turkey breast
1 medium onion, diced
2 (28-oz) cans diced tomatoes
2 medium zucchini, diced
2 medium yellow squash diced
1 (15 oz) can black beans
2 (15-oz) cans fat-free, reduced-sodium
beef broth
4 celery stalks, diced
2 green bell peppers, diced
1 (1 1/4-oz) package dry chili seasonings.

Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the turkey and onion and saute' until browned, about 10 minutes.

Transfer the browned turkey and onion mixture to a large soup pot and add the tomatoes, zucchini, squash, beans, broth, celery, bell peppers, and chili seasoning. Bring to a simmer over medium heat. Continue to simmer until the vegetables are tender, about 20 minutes

Serves 20.

Weren't you asking about no cook meals? I just got a facebook post from weight watchers with this link for 10 no cook meals and thought of you. I listed a few I'd like to try below! (Sorry no pictures, haven't tried yet. Will post when/if I make one.)
Cranberry-Nut Turkey Roll Ups
Spread two medium low-fat whole-wheat tortillas each with 1 tablespoon whole-berry cranberry sauce and 1 tablespoon fat-free mayonnaise. Top each with 3 ounces thickly sliced deli turkey breast, 1 leaf romaine lettuce, and 1 teaspoon chopped pecans. Roll up and serve.
POINTS value: 4

Bombay Tuna Salad
Drain a 6-ounce can of chunk white tuna packed in water and place in a bowl. Mix with 1/4-cup fat-free mayonnaise; 1 celery stalk, thinly sliced; 2 tablespoons minced red onion; 2 tablespoons sliced almonds; 2 tablespoons golden raisins; 2 teaspoons curry powder; 2 teaspoons lemon juice; and 1/4 teaspoon salt. Place a bed of Boston or Bibb lettuce on each of two plates and divide tuna between them.
POINTS value: 4

Melon and Berries with Poppyseed Dressing
Combine 1 cup diced watermelon, seeded or seedless; 1 cup diced honeydew melon; 1 cup sliced strawberries; and 1 cup raspberries. Toss with 1/4-cup bottled low-fat poppy seed dressing. Serve over 1/2 cup 1% low-fat cottage cheese.
Serving size: 2 cups
POINTS value: 5

Chunky Roast Chicken Slaw
Pull 6 ounces of white meat off a store-bought roast chicken. Mix with 1 small Napa cabbage, finely shredded; 1 Granny Smith apple, peeled, cored, and shredded; 1 celery stalk, thinly sliced; 1 small shallot, minced; and 1/4-cup low-fat ranch dressing.
Serving size: 2 cups
POINTS value: 5

Two Bean Chili Salad with Smoked Chicken
Drain and rinse one 14 1/2-ounce can French-style green beans and place them in a large bowl. Toss with 1 cup canned kidney beans, drained and rinsed; 6 ounces chopped store-bought smoked chicken breast; 1 tablespoon cider vinegar; 2 teaspoons chili powder; 2 teaspoons olive oil; salt to taste; and ground pepper to taste.
Serving size: 1 1/2 cups
POINTS value: 6

Mozzarella and Tomato
Thinly slice two large beefsteak tomatoes. Layer the slices with 4 ounces thinly sliced part-skim mozzarella and 12 basil leaves. Sprinkle the stacks with 2 teaspoons aged balsamic vinegar and 1/2 teaspoon salt.
Serving size: 1 1/2 cups
POINTS value: 4

Optional: Accompany each serving with 4 ounces cooked large shrimp, drizzled with a splash of white wine vinegar.
POINTS value: 6

Chef's Orchard Salad
Place 1 1/2 cups mixed greens on each of two plates. Top each set of greens with 1/2 peach, pitted and thinly sliced; 1/4-cup blueberries; 1/4-cup small red seedless grapes; 3 ounces thinly-sliced deli roast beef; and 2 tablespoons bottled fat-free vinaigrette. POINTS value: 5

1 pt "Whenever" cake

I'm not sure the official name of this recipe but it seems like it's designed for "whenever" you're in the mood for a little cake. Hopefully I remember the recipe right. I'll be trying this soon.
1 box angel food cake mix +

1 box "any flavor" cake mix

Mix both together in a ziploc bag. "Whenever" you feel like some cake: scoop out 1/3cup mix, add 3 tbsp water into a microwavable dish and microwave for 1 minute. Apparently, that will give you 1 pt cake in 1 minute! Good luck! Can't wait to try this. (I'm a little nervous about the "just cake-no frosting" concept so I think I might go get some of that ff dreyer's slow churn brought up by a member last week. It's on sale this week at albertson's (2/$6) and my FAVORITE dreyer's 1 pt strawberry whole fruit bars are on sale too for $1.99. That's a stock up price!

Baked Macaroni and Cheese with Broccoli

This was really good for a ww mac and cheese dish. I made it as dinner but think it would be a great potluck item!

Level of Difficulty: Moderate

This casserole-like dish hits the spot when you’re in the mood for a hearty pasta recipe. Serve right away for the best flavor and texture.


Ingredients
2 spray(s) cooking spray
12 oz uncooked pasta, gemelli or other twisted pasta (about 2 1/2 cups)
1/8 tsp table salt, for pasta cooking water
10 oz broccoli, small florets (about 2 1/2 cups)
1 tsp butter
1/3 cup(s) fresh bread crumbs
3 Tbsp grated Parmesan cheese, divided
2 1/2 cup(s) fat-free skim milk
1/3 cup(s) all-purpose flour
1/2 cup(s) onion(s), diced
1 cup(s) low-fat shredded cheddar cheese, sharp-variety
1 tsp Dijon mustard
1 1/2 tsp table salt
1/2 tsp black pepper, freshly ground
Instructions

* Preheat oven to 375ºF. Coat a shallow 2-quart baking dish with cooking spray.

* Cook pasta in a large pot of lightly salted boiling water according to package directions, adding broccoli to water 3 minutes before pasta will be done; drain pasta and broccoli and return to pot.

* Meanwhile, in a large saucepan, melt butter over medium heat; add bread crumbs and cook, stirring often, until light golden, about 2 minutes. Remove from heat and transfer crumbs to a small bowl; stir in 1 tablespoon of Parmesan cheese and set aside.

* In same saucepan (wipe clean if necessary), whisk together milk and flour until blended; add onion. Bring to a boil over medium-high heat, whisking frequently. Reduce heat to low and simmer until thickened, about 2 minutes.

* Remove from heat and whisk in cheddar cheese, mustard, salt, pepper and remaining 2 tablespoons of Parmesan cheese. Pour over cooked, drained pasta and broccoli; toss to mix and coat.

* Transfer to a baking dish and sprinkle top evenly with bread crumbs. Bake until bubbly at edges, about 20 to 25 minutes. Divide into 8 pieces and serve. Yields 1 piece per serving.

Newly discovered ww recipe site!!! Gina's ww recipes.

I was just searching for a picture to use for my recipe request post and came across this most mouthwatering cobb salad picture. Wonderfully, it connected me with this website. Happy Cake!


I guess that's an appropriate name for this recipe. It made me happy just thinking about eating it! :D It called for a 9 x 13 pan but I like layer cakes if I'm going to make a cake. There was PLENTY of topping for filling and top too. I thought it was good but would have been even better with a few berries, maybe topped with strawberries and a sprig of mint. Darn, and Marie brought some today.
Also, There is a VERY similar recipe on the side of the pudding box. Slight variations, using angel food cake instead but I want to try that too!!

This is 1/16 of the cake so 4 pts worth. Pretty generous serving size I think!?

Beef and Bean Soft Tacos-POINTS value: 5 for 2!!!

This is a great make ahead crockpot recipe for those nights you just don't have time to cook and want real food when you come home.
